Preparation Time
Ingredients
For the filling:
2 ripe avocados
1 mango, diced
150-200 g cooked shrimp
50 g crumbled feta cheese
A few coriander leaves, or parsley if you don't like coriander
40 ml extra virgin olive oil
Juice of 1/2 lemon
Salt and pepper to taste
Equipments
For
4 people
Instructions
1. Cut the avocados in half, remove the pit and carefully scoop out part of the flesh with a spoon, taking care not to break the skin. Set the shells aside, as they will be the little boats in which you will serve the filling.
2. Dice the avocado flesh and place it in a bowl together with the mango, the cooked shrimp and the crumbled feta cheese.
3. Add the chopped coriander or parsley, then the olive oil, the lemon juice, a pinch of salt and pepper, and mix gently so the avocado does not fall apart.
4. Fill the avocado shells with the mixture and finish with a little more feta cheese, a few coriander or parsley leaves and a drizzle of extra virgin olive oil on top.
